Healthy Birthday Cake for 1

Rise and SHINE! It’s Friday!

Actually I’m on my way to the gym at 8am… let me groan a little. I HATE going to the gym early in the morning. My work schedule doesn’t allow it thankfully, weekends do and this is now the 2nd time I’ve trained with my coach where I have to meet him at these kind of hours. I usually walk in with a hat on and a grumpy face.

Anyway, since I have to skidaddle (and it saddens me I had to google that to make sure I spelled it right). I have a recipe for you today that I made last night! It was so yummy and delicious I had to share.

Now I’m not all fancy here like usual, this was just on the fly and I took pictures with my iPhone, so I will eventually fix this page and make the pictures blog pretty 😀

I never had ACTUAL birthday cake for my birthday while I was down in Savannah, so I’m making up for lost time 😉 This is Healthy Birthday Cake for 1 – AKA a Birthday Protein Mug Cake.

I took one bite of this heavenly sprinkled tower of cake and said OH MY where have you been all of my gym life?

And ya know… I thought of my girl Mary. I’ve never met anyone in my life that loves cake as much as that girl. I’d love to go back in time and watch her as a little kid at birthday parties. I giggle thinking about it.

Here’s what you’ll need:

  • 3 T oat flour
  • 1/2 scoop of Corfetti Cake Batter Cellucor Whey Protein (if you do not have, use vanilla)
  • 1 t of stevia
  • 1/2 t baking powder
  • 2 T unsweetened vanilla almond milk
  • 1/2 t butter extract
  • 1 egg white

Mix all ingredients together in a mug,  no need to spray the mug with oil, it should slide right out if you do not over cook it! Pop in the microwave for 90 seconds.

For the frosting: 

  • 1 T light cream cheese
  • 1 T unsweetened vanilla almond milk
  • 1 T Corfetti Cake Batter Cellucor Whey Protein (it actually is called CORfetti, it’s not a typo)

Mix all of the ingredients together, Place in microwave for 20 seconds then mix again. Take the cake out of the mug (turn it upside down and give it a tap), spread the icing and top with sprinkles!

Macros:  247 calories calories, 5 grams of fat, 22 grams of carbs (4 grams fiber, 1 g sugar), 26 grams of protein

Now let’s ALL EAT CAKE!

    Omg I need this in my life!! It looks so good!! I think I would substitute the cream cheese for coconut oil, only because I’m lactose intolerant haha. Ugh drooling!

    oo I love a protein mug cake, so easy to make and its an excuse to eat cake! I’m the opposite of you, I love an early morning workout (not too early but bout half 7/8? ) , sets me up for the day. Obviously when I have work commitments,my routine may change a bit. I’m intrigued about your new training routine, are you able to let us now how you are training at the moment?       I’m pretty much doing the same exercises but at a heavier weight because I have a spotter. Hardly any cardio to build!
