Skinny Minnie Stuffed Cod

My dad is able to get his hands on some of the best cod I’ve ever had. Actually, I’ve never had a piece of fish that tastes as good as this cod does! So flaky, meaty, and melts in your mouth! I love it.

I wanted to do a little something with it, rather than just plain olive oil and a skillet. So I decided to “stuff” it the best I could. Fish can be a little difficult to stuff, especially this cod because it’s so tender it falls right apart (which makes it extra amazing).

I had some extra fresh kale that I had to use up, so I decided to use it for this recipe. The sauce in the middle is made out of greek yogurt instead of a butter or mayonnaise base and it tastes just as good!

For this recipe you will need:

-4-6 ounces of cod
-1/4 cup of plain greek yogurt
-2 Tablespoons of fresh lemon juice
-2 Tablespoons of fresh chives
-1 teaspoon of onion powder
-1/2 teaspoon of garlic salt
-1/4 cup of chopped zucchini
-1/4 cup of kale (stem removed, chopped)

Preheat your oven to 350 degrees Fahrenheit

Start by mixing together the greek yogurt, lemon juice, onion powder, chives, and garlic salt

This is more than you actually need. I only used about 2 Tablespoons, but you can make more than one piece of cod, use it for other things, or even eat it as a dip!

Now spoon some of the greek yogurt mixture in the middle

Add the chopped zucchini and kale on top (it will be a tad difficult to keep it all in, it’s okay if some falls). Then close the fish on top.

As you see in the above picture, my fish fell apart, so I placed cubes on top instead! Brush a little more of the greek yogurt mix on top and sprinkle some of the zucchini that may have fallen on top.

Place in the oven for 15 minutes

I just loved the extra tang the greek yogurt gave the cod. It made it extra moist and gave it a buttery taste without all the added fat and calories. Plus a mega protein boost too!

This stuffed cod has: 161.5 calories, 1.6 grams of fat, 4.6 grams of carbs, and 32.9 grams of protein!

Insanely healthy, I know! Perfect if you are trying to watch your carbs for the day (I sometimes cycle my carbs and do super high carbs on heavy workout days, and lower carbs on lighter workout days)
