Tiny Tofu Pizzas
This is the first recipe for my easy peasy week! If you are in a rush and don’t feel like cooking an extravagant meal, no worries, I am usually in the same boat as you. The work weeks are insanely busy for me working long hours and then hitting the gym. Who the heck feels like making a huge meal when you get home?
So I bring you a simple pizza recipe but instead of a crust, I used tofu slices! It had been a while since I had tofu since I went back to eating meat again. I forgot how much I missed it!
This easy peasy recipe is only 3 ingredients, well 4 if you count the olive oil spray, but I don’t!
For this recipe you will need:
- 1 package of extra firm tofu
- 1/2 cup of pizza or marinara sauce
- goat cheese crumbles or pinwheels (I used one 1 oz pinwheel for about 6 pieces)
(Makes 2.5 servings)
Start by preheating your oven to 400 degrees Fahrenheit
The night before I cook my tofu, I press out the water using my Tofu Xpress (Amazon). You can also place it on some towels and then place a heavy pan on top, but it’s hard to get a perfect rectangle this way.
Once your tofu is pressed, slice it in half longways, and slice very thin slices, a little less than 1/4 of an inch (will make about 10)
Place tinfoil on a baking pan, spray with a little olive oil and place the slices on top. Spray the top of the slices as well to get them crunchy
Cook for about 20 minutes
After 20 minutes, remove from the oven, place about 1/2 Tablespoon of pizza sauce on each piece
Top with goat cheese crumbles and cook for an additional 5 minutes till melted
Tiny Tofu Pizzas!
