Chicken Parm Cups

Welcome to the first recipe of appetizer week! After looking in my fridge, a huge block of fresh parmesan cheese was staring back at me and I wanted to use it!

This little recipe is not only simple, but it’s absolutely adorable. I’m all about presentation! Take an edible bowl to a get together and I promise you will be the hit of the party! I mean really, find me one person who says an edible bowl? Oh no thank you… PLEASE!

Bonus points because it’s only 100 calories! No need to go out and purchase a 100 calorie snack, you have an easy recipe you can whip together in your own home. And much more satisfying than those mini processed cheese snacks that you get 4 of šŸ˜‰

For this recipe you will need (makes 1 cup):

-1 Tablespoon of grated fresh Parmesan cheese
-pepper
-1 ounce of chicken breast, cooked, chopped
-1 Tablespoon of tomato sauce (no salt added)
-sprinkle of fresh basil

Preheat your oven to 350 degrees Fahrenheit

Grate fresh Parmesan cheese. I did mostly the fine side of the grater, but a little bit of the bigger one too! Watch those fingers! I ended up with a bandaid because I’m an aggressive cheese grater, ouch! šŸ™

Mix in some freshly ground pepper

Place parchment paper on a cookie sheet and spray with a little olive oil spray. Spread the parmesan cheese in small flat circles

Place in the oven for 6 minutes. These will start to bubble!

Let cool for no more than 30 seconds. With a spatula, peel off parchment paper and drape over the top of a shot glass, mini muffin tin, or… get creative!

I don’t drink so I didn’t have a shot glass, I didn’t have a mini muffin tin, so I used a little ketchup bottle I had saved as a souvenir from one of my trips!

Once it has completely cooled, remove it and you end up with a cute little bowl!

Get ready to fill this!

Take 1 ounce of cooked chopped chicken breast and fill the cup

Next take a Tablespoon of tomato sauce and pour over the chicken

Sprinkle a little fresh basil and you have a beautiful Chicken Parm Cup! Creative huh? I thought so!
