Little Blueberry Oatmeal Cups

I love oatmeal! Pretty sure everyone knows that by now. I also am a big fan of baked oatmeal, but I don’t like a huge pan of it, I usually end up making my own small portions.

I bought a new mini cupcake tin at Target a few weeks ago and still hadn’t used it, so decided to make baked oatmeal in it! I just love miniature versions of foods, all about presentation right? This baked oatmeal is pretty simple, with only a few ingredients, but the blueberries make an impact on your taste buds 🙂

If you make my recipes regularly, you should have all these ingredients in your fridge and cabinet!

For this recipe you will need:

  • 2 cups of old fashioned oats
  • 1 cup of frozen wild blueberries (I like wild because they are small and perfect for this recipe)
  • 1 packet of ground chia seeds (or 2 teaspoons)
  • 2 scoops of vanilla protein powder
  • 1/2 teaspoon of baking powder
  • 1 1/2 cups of unsweetened vanilla almond milk

Makes 24-30 little blueberry oatmeal cups 

Start by preheating your oven to 350 degrees Fahrenheit

Mix together the oats, blueberries, chia seeds, baking powder, and protein powder

Then add the milk and stir into a blue/purple dreamy oatmeal!

Place cupcake liners in the tin and spoon about a Tablespoon or more in each one.

Then pop in the oven for 25 minutes

Each little blueberry oatmeal cup has: 38.3 calories, 0.9 grams of fat, 5.8 grams of carbs, and 2.1 grams of protein.

Perfect little bite! These would be GREAT for a little brunch get together or even an early afternoon shower.

Now this makes at least 24 of them, but I also had about 1/2 cup leftover serving. I will eat it as overnight oats instead!

    Minnie, I just love your enthusiasm and your “love of life”!! I read your thoughts on Wegman’s, snif, snif. I used to live near a Wegmans in upstate NY but since, moved to St. Louis…no Wegmans. Made me homesick for an absolutely INSANE grocery store.
