Snow Problems
Hey Gang,
So if you saw my post on Instagram yesterday I talked about never giving up. Sunday night I was stressed, I had finished filming another project I was working on, and I looked around me to see the mess I had created in the process of doing so. I don’t do well with messes. I don’t do well with clutter. I’m type A, I like organization, and I like things nice and clean.
Well when things seemed to have fallen apart, it was the tip of the iceberg to send me over the edge. Then I said those words “I can’t do this anymore”.
I don’t like using the words “I can’t”, because the truth is, I CAN. I can do it. I just need to space out what I plan on doing, and give myself some room to breathe and get it all done.
I know you are thinking oh poor Minnie. She is a blogger with problems. I guess you could say that. But I work really hard during the day at work, I work hard in the gym, I work hard on my blog, my videos, my meal plans, my recipes for the cookbook, and then I try to squeeze in time to cook, clean, and see my family.
How does one do it all?
Well as my mom says, you can’t have everything at once. Take one day at a time.
So yesterday morning when I woke up and went to work I watched a small edit on my phone of my video project. I had a sparkle in my eye and a smile on my face because I am doing what I love. I may be sacrificing free time, but I will NEVER GIVE UP. Dreams aren’t handed to you. And even if they were, I wouldn’t want it that way. I want to know that I earned it.
After I watched it I said ” I CAN”.
Dreams take time, life is crazy, and my happiness is decided by me! No one else. So darnit, I’m going to keep going and keep that smile on my face đ

Moving on from my motivational moment… Here is what you missed Sunday. We had SNOW here in Maryland. A few inches on the ground and then some ice overnight. Luckily the streets were clear for me to drive to work.
I did take out Miss Shelby Ann and she looked like a perfect little snow puppy.
Later on since I was pressed for time, I did what I call the “busy girl meal prep”, meaning for lunches I threw stuff in a crock pot and walked away. I had thawed some lean ground turkey and decided to make chili. The perfect food for a wintery week. Plus I really just wanted to clean out my cabinets some and avoid going grocery shopping.
So what’s in it?
- 3 lbs of lean ground turkey meat
- 1 white onion, chopped
- Â 28 oz can of diced tomatoes
- 14 oz can of yellow corn, no salt added
- 8 oz can of tomato sauce, no salt added
- 1.5 oz of tomato paste
- 2 T of almond meal
- 3 T of chili powder
- 1 T of oregano
- 1 T onion powder
- 1 T smoked paprika
- 1/2 T red pepper flakes
- 1 T cumin
- 1/2 T red cayenne pepper
- 1 teaspoon salt
- 1 teaspoon pepper
So tons of spices, but it gives it a great flavor! I like to use no salt cans and add my own salt. If you cannot find those, try reduced sodium.
I let it cook on low in the crock pot for a good 6 hours, stirring half way through.When I get ready to serve I drain off some of the fat and mix in fresh baby spinach. YUM! While I ate this, Phoebe had a bone.
Lunch done for the week. Obviously this is a lot of chili, so I freeze half of it to pull out another time.

That chili looks super good!! And way to stick to your dreams!! I get that way about getting my nursing degree. It scares me how much work it’s going to be, I saw that first hand this semester. But it’s something I’m passionate about and want more than anything in the world. So I know in the end I won’t regret it.
