Frozen Strawberry Pie

Has this girl lost her mind? Pie? What happened to clean eating?

It’s still in full swing! I am just getting SUPER creative and sick of an apple with peanut butter for dessert (okay really I’m not, I would eat it every meal if I could, but I want to see what else I can make!)

Everyone has a bit of a sweet tooth! But problem is those calories will stick to you like glue. So hard to burn it off, but you still want something sweet besides your basic fruit bowl.

I am here to show you how clean eating can be worked into a fabulous dessert like this pie! My favorite kind of pies are mousse type pies with graham cracker crusts. Well graham crackers aren’t clean and neither is butter, so how am I going to make a crust? I started by looking in my cabinets and a genius idea struck! Oats, almonds, and coconut oil. ALL HEALTHY FATS and clean to make a crumbly delectable crust.

But what do I fill it with? I don’t want to use greek yogurt as a filling, too tangy! Cool whip is not clean, so that’s out.

LIGHT BULB! I dug around in my freezer and found frozen bananas I chopped up for future Frozen Monkey‘s. I didn’t want to do the same thing again. As I was looking in my fridge, staring back at me was the HUGE thing of strawberries I bought the other day at Whole Foods! YES!

And the Frozen Strawberry Pie is born 🙂

For this recipe you will need:

-1 cup of old fashioned oats
-3, 100 calorie packs of raw unsalted almonds (it’s a little less than 1/2 cup)
-1 Tablespoon of stevia in the raw
-1 Tablespoon of melted coconut oil
-1/4 cup of natural unsweetened applesauce
-3 chopped up frozen bananas
-2 cups of fresh strawberries
-pie tin and food processor

Preheat your oven to 350 degrees Fahrenheit

Start by making the crust. Add the oats, almonds, and stevia to the food processor and mix until the almonds are in teeny chunks

Melt your tablespoon of coconut oil (about 15 seconds in the microwave) and add it to the food processor with the apple sauce. Turn it on and mix until it starts forming into clumps

You might have to scrap the sides some!

Now spray your pie pan with a little olive oil and press the crust mixture down into the pan. Push up on the sides to have a crunchy side crust! (The best part in my opinion)

Place in the oven for 25 minutes (put your timer on so you don’t burn it!)

In the meantime make your filling 🙂

Clean out your food processor, then add the frozen bananas to it. Mix until you have a fluffy banana whip

I popped the whole thing in the freezer to keep it cold until my pie crust finished cooking

After the 25 minutes, remove the pie crust from the oven and let it completely cool on the counter.

Take the filling out of the freezer and fill the pie

I actually popped it back in the freezer overnight to let it set. When I am ready to eat, I let it sit on the counter for about 20 minutes or so until I can cut it.

And of course the best part of it….

I’m telling you, this crust absolutely makes the pie. It tastes like it shouldn’t be healthy, but it is!

This amazing frozen sweet treat per serving is only 170 calories, 7.8 grams of fat, 23 grams of carbs, and 4.3 grams of protein! Compare that to regular strawberry pies that have over 350 calories per serving and 15+ grams of fat (and not the healthy fat!)

Remember the fat is from coconut oil and almonds. HEALTHY fats. So this dessert has 0 grams of the “bad fats”. A dessert that is actually GOOD FOR YOU! No need to thank me over and over, it’s okay 😉

This pie makes 6 huge servings. I am not a skinny slice kind of gal, let’s face it!

    Can I sub the coconut oil for a different oil?

      the coconut oil helps to make it set, but you could use extra applesauce or banana as well!
