Sweet Breakfast Hash
Ever wake up wanting something sweet but still want to keep within your diet?… excuse me LIFESTYLE!?
Yeah you could do protein pancakes or healthy french toast, but sometimes I’m really not in the mood for that stuff. I prefer eating those as dinners actually.
This breakfast hash is quick, simple, and has a few nutritious ingredients to start your day! A loaded mix of sweet potatoes, egg whites, onion, and spinach combine the ultimate breakfast for your intake of your proteins, carbs, and sweet tooth all in one.
Follow along for a healthy hash!
For this recipe you will need:
- 1 teaspoon of extra virgin olive oil
- one small sweet potato, peeled and chopped
- half small white onion chopped
- 4 egg whites
- 1/2-1 cup raw spinach leaves
- 1/2 teaspoon of cinnamon
- sugar free maple syrup for drizzling
This is the size sweet potato I used, little guy! But perfect for this.
Heat your pan with olive oil on medium to high heat. Add the sweet potato
Once it has browned add the onion
Once cooked, reduce the heat to low and pour in the egg whites
Mix and add the spinach
Sprinkle with cinnamon
Plate and drizzle with sugar free maple syrup!
Sweet, delicious, and healthy!
This big serving is only 220 calories, 4.5 grams of fat (mostly from the olive oil), 26 grams of carbs, and 17 grams of protein!
I just love the maple drizzle on top. Maple syrup is not just for pancakes anymore! Goes great with this dish! Definitely hits the spot in the morning š
