Carrot Fries

Everyone loves a french fry. Problem is they aren’t too healthy. There are sweet potato fries, but everyone makes those and they have been baked every which way. I bring to you a little something new and different, THE CARROT FRY!

I know what you are thinking, baked carrots? Is she insane? Who wants to munch on carrots? I’m not a rabbit! Well think again! When these are baked they bring out a natural sweetness, and in my opinion taste better than a baked sweet potato!

The spices I used are also a terrific combo. A little bit of spice, but not too much, savory, and a little salt all combine to make a perfectly seasoned fry. These don’t even need a dipping sauce because they taste great on their own 🙂

I will be making these regularly. Another one of my recipes where I think oh I might end up tossing these out, and end up LOVING IT!

For this recipe you will need: 

  • 1 pound of organic carrots, about 8 small to medium sized, peeled and cut into carrot sticks
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1 teaspoon of basil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 2 teaspoons of extra virgin olive oil

(Makes 2 servings)

Start by preheating your oven to 425 degrees Fahrenheit

Chop your carrots into sticks. This is about the pile you will have

Place in a large freezer bag and add all your spices. Then drizzle in the olive oil.

Give it a big shake, and place on a cooking tray. I sprayed a little extra olive oil spray on my pan to make sure they wouldn’t stick since it was my first time making them.

Bake for about 20 minutes

The spices look great on these. I bit into one and was so pleasantly surprised. Best carrot I’ve ever had!

Now you guys know I love to dip, but I didn’t use a thing for dipping! The spices alone did the job. Dipping it in anything would have ruined the carrot.

Nutritional facts per serving: 172 calories, 4.8 grams of fat, 21.7 grams of carbs, 2.1 grams of protein, 10.3 grams of sugar (natural), 6.4 grams of fiber (2 servings for the batch)

The fat is coming from the extra virgin olive oil. Remember these are healthy fats and our bodies need them! Plus the carrots really require the olive oil to give them good flavor 🙂
