Cucumber Bites
Appetizer #3 is a lighter recipe than yesterday. The meatballs were a little heavy, so I wanted to do something cool and crisp, but perfect for any season.
Cucumbers are a great snack. They are low in calorie and have a nice little crunch! I would always just eat cucumbers in spears either plain or dipped in salad dressing, but I’ve mixed it up here!
The cucumber in this bite replaces a cracker. It’s lower calorie, plus it’s a vegetable! Listen to mom, eat your veggies š And anything that includes cream cheese has to be good right? Right!
For this recipe you will need:Ā
-1/2 english cucumber (sliced into 1/2 inch rounds)
-2 Tablespoons of 1/3 less cream cheese
-1 Tablespoon of green onion chopped fine
-1 Tablespoon of fresh basil, chopped fine
-2 slices of Turkey Bacon, chopped
(Makes 10 cucumber bites)
Start by placing 2 Tablespoons of 1/3 less cream cheese in a bowl. I’m not a fan of “fat free”, it has NO taste! You might as well eat that tub of glue paste with the stick they give you in kindergarten (we all knew a kid that ate this, maybe you are that kid? But I’m not).
Mix in the finely chopped basil and green onion
Slice your cucumber into 1/2 inch rounds. I like using a vegetable peeler and peeling strips in my cucumber for a fun presentation! Cover each cucumber with the cream cheese mixture
Cook your turkey bacon. Turkey bacon is the easiest to cook in the microwave. A few minutes and your done
Crumble the turkey bacon and sprinkle on top of the cucumbers. It’s only a little bit on each one so don’t worry too much about the salt!
Easy as can be!
These cucumber bites are a wonderful blend of flavors and textures. You have the salty crunch from the turkey bacon, the smooth herb cream cheese, and the juicy cucumber. What’s not to enjoy?
Each little bite has: 18.3 calories, 1.25 grams of fat, 1.3 grams of carbs, and 1 gram of protein. So grab a few guilt free! š
