Healthy Hot Pockets

“What are you gonna pick? Hot Pockets”

Okay if you are a kid of the late 80’s-90’s like I am, chances are you were heating up a Hot Pocket in your microwave at one time in your child hood. I can remember the little clumps of cheese that filled the pocket, and I would pick them out and feed them to our yorkie Sophie and pomeranian Little Du. I miss those pups!

Anyway, they are not very healthy, even the “lean pockets” still have saturated fats, and really I could eat both of them in one sitting.

This is a healthy alternative to the fatty Hot Pocket! The “pocket” itself is made from my whole wheat pizza crust. Go here for the recipe.Ā – I make a bunch at one time and then put them in the freezer. When you are ready for pizza you just take one out!

For this recipe you will need:Ā 

-one serving of whole wheat pizza crust
-1/4 cup of organic strained tomatoes (I found this at Wegmans)
-1/4 cup of pizza sauce of choice
-1/4 cup of 1% no salt added cottage cheese (I like Friendship brand)
-2 Tablespoons of goat cheese crumbles
-1 egg white

Start by preheating your oven to 350 degrees Fahrenheit

Take out your dough and split into two pieces. Sprinkle a little flour on the counter so it doesn’t stick. Roll out the dough into rectangular shaped pieces

Now you are going to mix together the pizza sauce with the strained tomatoes. I do 50/50 to reduce the amount of sugar that regular pizza sauces can have. I really like these tomatoes I found at Wegmans!

Spread the sauce on your rectangular dough pieces

Now add the cottage cheese, sprinkle the goat cheese on top!

Fold these in half, make sure you squeeze the edges together!

Spray a baking sheet (I always lay tinfoil first). And take the egg white and paint the top of the pocket. This gives a nice shine and golden brown color to the pocket!

Bake for 15 minutes

Voila!

The cottage cheese mixed with the goat cheese made the perfect combination! You couldn’t even tell it was a no salt added version. A little bit of goat cheese goes a long way too.

These are a wonderful Sunday lazy food day!

    Can these be frozen and reheated? I’m looking for a recipe for something clean I can freeze and eat on the go!

      I’ve never tried freezing them, but I’m sure you could! Probably couldn’t microwave like a hot pocket though, it would be best to thaw out and heat up in the oven I would guess.
