PB & J Protein Bars
I’m always looking for ways to add protein to my diet. Being a vegetarian isn’t difficult, but I really have been trying to up my protein intake lately, and I can only drink so many shakes!
So I decided to start using the powder in different ways š
Peanut Butter and Jelly is a classic. All kids love it. I really wasn’t a fan of peanut butter as a kid. I was the weird kid who would ask for a “jelly sandwich”. And it couldn’t be grape jelly! NOPE! Had to be strawberry! Recently I’ve become addicted to peanut butter type desserts. I use my PB2 powder for a lot of different things to get that peanut butter taste. 85% less fat, yes please!
These yummy treats are about 55 calories a bar, and about 9 grams of protein! So really you can have more than one without the guilt š
For this recipe you will need:
-1/2 cup of vanilla protein powder (I use the EAS whey)
-1/4 cup of PB2 (chocolate peanut butter powder)
-1/2 tsp of baking powder
-1/4 cup of unsweetened vanilla almond milk
-1/4 cup of egg beaters (or egg whites)
-1/4 cup of natural applesauce
-2 teaspoons of stevia (or sweetener of choice)
-1/4 cup of raspberry preserves (or jelly of choice)
Preheat your oven to 350 degrees Fahrenheit
Mix together your wet ingredients
Then add all the dry ingredients and mix until you have a batter!
Spray your bakeware with a little olive oil and then pour the batter
Next take your preserves and slowly swirl in a little at a time into the batter. I just took a knife and made zig zags through the batter
Now cook this for 25 minutes š
When time is up, do the toothpick test, and let it rest for at least 10-15 minutes
Once it has cooled, cut into 8 equal slices, and wrap leftovers!
So delicious and full of protein!
Tastes just like a peanut butter and jelly sandwich š
