Protein Packed Cereal

The title of this recipe is exactly what it sounds like, but it’s low carb too. WHAT!? Low carb cereal? How is that possible?

It’s possible!

The main ingredient in this cereal is TVP, textured vegetable protein. TVP is soy that has been broken down, fat removed, and what you are left with is pure protein that is nice and crunchy.

And it packs a HUGE PUNCH of protein in just 1/4 cup! There are 12 grams of protein per serving, and only 4.7 grams of net carbs. Net carbs are what is left over from carbs that make up the fiber content. Which means you are also getting 5.3 grams of fiber in this cereal (10 grams total of carbs).

And a large bag of it only cost me $2.49. There are 11 servings in a bag, so the cereal alone is only costing you 23 cents a serving! After doing the math and adding up my ingredients and what I pay, this bowl comes in at LESS than a dollar! Super easy, super affordable, and super healthy. No excuses right?

This cereal is insanely easy to make too. I am a lover of overnight oats, so I just do a version of that but with the TVP. You could also cook this stove top if you like warmed oatmeal, but this is just too easy!

For this recipe you will need:

  • 1/4 cup of TVP
  • 1/2 cup of unsweetened coconut milk *can substitute almond*
  • 1/2 scoop vanilla whey protein powder
  • 1 teaspoon of shredded coconut for sprinkling
  • 1/4 teaspoon of vanilla extract

Mix together the TVP, coconut milk, and whey powder. Place in the fridge covered overnight.

In the morning, top with shredded coconut. Delicious!

Now that’s a healthy breakfast! I pair it with eggs, and of course a side of coffee 🙂

Happy eating…

P.S. You can find TVP at any local health food store or online. I found mine at Wegmans!

I think I want to try this. Where do you buy it?

If you read my PS I put it there! 🙂 Wegmans, but amazon has it too if you can’t find it in stores. Most health food aisles will have it.

Sounds awesome!! Thanks for posting. I’ve been loving my overnight oats lately but it’ll be nice to have something else to add into the breakfast rotation!

Yes it’s yummy. If you are a “weird texture” person, it might bet better to soak them for a few hours instead of overnight.

Interesting…can you describe the flavor? Is it sort of like oatmeal?

    1. Katie

It’s a bit chewy if soaked, doesn’t have much of a flavor! Just reminds me of a plain special K or something.
