Skinny Pasta Bowl
HUGE bowl of pasta for dinner! Huge mistake? Well if you had Olive Garden, yes! If you had my Skinny Pasta Bowl, NO!
Would you believe this HUGE bowl of pasta has only 240 calories?
Yeah I wouldn’t believe me either! But I promise it does! Thanks to some miracle noodles ๐ Miracle noodles you can usually find in the produce aisle (keep refrigerated). These are a little different than the shirataki tofu noodles. The miracle noodle has zero calories and is made from water, yam flour, and lime. How do they do it? I’m not sure, but it’s like eating noodles!
Anyway, I 100% recommend pairing this dish with a protein to complete your meal. I did a piece of white cod for my recommended protein intake ๐ The miracle noodle is designed to keep your dish low in calories, but you STILL need to get them elsewhere. I am by no means saying a meal should be 240 calories! I just like big portions and a lot of bang for your buck!
For this recipe you will need:ย
- One 14 oz can of artichoke heartsย
- One package of Miracle Noodles
- 1 cup of broccoli
- 1/2 teaspoon of minced garlic
- 1 teaspoon of extra virgin olive oil
- 1/2 ounce shredded parmesan cheese
- pepper to taste
Start by preheating your oven to 400 degrees Fahrenheit. Roast your broccoli in the oven for about 15 minutes (I like it roasted best, but you can also cook it on the stovetop).
On medium to high heat, spray a little olive oil spray in a pan and place the artichoke hearts in the pan (drain them and blot dry first)
Cook for 3-5 minutes on one side and flip
Add the minced garlic, then the broccoli
Drain your miracle noodles and give them a quick rinse
Add them to the pan
Mix and add the olive oil and pepper
Serve in a bowl and top with shredded parmesan cheese (I used a veggie peeler)
Those noodles are hidden under there!
I just love a big bowl of pasta without all the carb overload!
This bowl has: 240 calories, 7.5 grams of fat, 29.4 grams of carbs (broccoli and artichoke has carbs but it’s good carbs!), and 15 grams of protein.ย
So when you pair it with a protein you’ll end up with a good 35-40 grams of protein! Eat right, eat healthy, eat BIG! ๐
