Valentine’s French Toast

I haven’t had french toast in a very long time. For some reason I always think of vacations! It’s one of those dishes you order when you are at your hotel at the sit down breakfast. I can remember going on a cruise to the Bahamas in 2009 and having the french toast in the dining room. You know it was good if I still remember it!

This french toast is healthier and is soaked overnight to create a wonderful moist dish. It’s baked in a casserole dish rather than a skillet, and still turns out amazing!

Perfect for a night you are having “breakfast for dinner”, a brunch, or an early rainy day.

Plus, it turns out absolutely adorable with the cookie cutters. Spreading the love through food!

For this recipe you will need:

-14 slices of bread. I used half 100% whole wheat, half ezekiel bread
-1 cup of unsweetened vanilla almond milk
-1/2 cup of egg whites
-2 teaspoons of cinnamon
-1 teaspoon of vanilla extract
-1 large scoop of vanilla protein powder
-1/2 teaspoon of salt
-2 Tablespoons of Splenda brown sugar
-1/4 cup of PB2 mixed with water
-sugar free syrup for topping
-heart cookie cutter

Start by mixing together your milk batter. Add the almond milk, egg whites, cinnamon, vanilla, protein powder, and salt.

Next prepare your slices of bread. Using a cookie cutter, make little heart shapes (I saved the edges of the ezekiel for a later use). Double up the slices when cutting.

I used half ezekiel and half 100% whole wheat because I wanted to see what would taste better. The ezekiel was MUCH better because it is a more dense bread. It soaked up the milk batter a lot better and still had a crunch versus the whole wheat which was a little soggier. I definitely recommend using all ezekiel!

Place the bread on top of the brown sugar (still doubled up)

Pour the milk batter on top of the dish

Remember the protein clumps will melt. Sometimes this brand does this to me!

Cover with saran wrap and place in the fridge overnight

Prepare the topping. I bought these heart molds the other day at Wegmans. It’s actually an ice cube tray, but I placed PB 2 in them!

The next morning/night preheat your oven to 350 degrees Fahrenheit. Cook for 30 minutes

Serve up slices with sugar free maple syrup and top with PB2 hearts!
