Butternut Squash Chicken Burgers

I hope you are intrigued by the title! These burgers I made are fabulous and super healthy! I’ve mentioned before that I just love butternut squash. It has such a sweet flavor when roasted in the oven. Even my Phoebs loves it šŸ™‚

The ingredient list for this one may be a little odd, but it all comes together very nicely for a sweet chicken burger that you simply cannot say no to! I was very pleased with how they turned out and wish I would have made more to freeze. I make so many recipes all that time that I often have to log back onto my own website to remember what I put in some of my favorites šŸ™‚

Remember, all of my recipes can easily be substituted. If you are not a butternut squash fan, you can use pumpkin (I hate pumpkin). If you don’t have the quinoa flake mix I bought, use just plain quinoa or brown rice! Possibilities are endless šŸ™‚

For this recipe you will need:

  • 1 1/2 cups of shredded chicken breast
  • 1 1/2 cups of butternut squash (cubed)
  • 1/3 cup of quinoa flake blend
  • 1/4 cup of green onion (chopped)
  • 1/4 cup of white onion (chopped)
  • 1 1/2 Tablespoons of natural honey
  • 1 Tablespoon of whole wheat flour
  • 1/3 cup of dried cranberries
  • 1/2 Tablespoon of ground cinnamon
  • pepper to taste

Start by roasting your butternut squash, I roasted for about 25 minutes on 400 degrees Fahrenheit

To a mixing bowl add 1 1/2 cups of shredded chicken breast (the night before I placed frozen breasts in a crock pot on low for 9 hours- so easy!)

Mash your butternut squash. I did it right on the pan with a spatula

Add to the chicken

Add 1/3 cup of cooked quinoa flakes blend. I found this amazing sunrise blend from Wegmans,Ā look at the great variety!

Next the onion

I used green and white because I only had a little of both!

Add the cinnamon, pepper, whole wheat flour

Mix well, then add the dried cranberries and the honey for a little extra sweetness

Now form into patties. Make them fairly large because everything is already cooked! This will make about 7 burgers

Spray a pan with olive oil spray and cook on high heat for 2-3 minutes on each side

These were so yummy! I just devoured them. I’m also putting in my lunches for the week! šŸ™‚

    Oh my gosh!!! These sound amazing! I can also see adding some curry powder to this for a fun twist to play up the butternut squash and cranberries.
