Dijon Dressing

I haven’t had a really good “dinner salad” in a while. I’ve been on a kick of side salads, but not a big one for dinner. I probably ate huge dinner salads about 3 times a week before going 100% clean, and I don’t know why I suddenly stopped!

Even as a kid G-Mama always made my sister and I salads. We were raised right! I love my veggies.

I also used to love Ken’s light honey mustard, but since it wasn’t clean I stopped eating it. Plus after making my own vinaigrette with strawberries, I swore I’d never go back to store bought dressings! And I won’t!

This dressing is so easy because all you do is mix a few ingredients together. No food processor needed for this one!

For this recipe you will need:

-1/4 cup of extra virgin olive oil
-3/4 cup of apple cider vinegar (or any vinegar you like, I like it tangy!)
-1/4 cup of dijon mustard (clean)
-2 Tablespoons of natural honey
-pepper to taste

Pour all ingredients in a measuring cup

I found these cute little bottles at Bed Bath and Beyond the other day. PERFECT for salad dressings! They were $1.99 and you can find them near the kitchen gadgets.

I cooked some chicken, and added warm veggies to a bed of baby romaine.
