It’s Thursday

Not very creative with my title, I know, BUT I couldn’t be more thrilled that Thursday is here. Yesterday I kept thinking it was Thursday all day long. You can imagine my disappointment when I realized I still had one more day of work to get through.

The good thing about yesterday was that I spent the whole day in the OR. Remember how I complained about not getting my full day? Well I got that day back πŸ™‚ Lots of sewing too so I was pleased. I inhaled oats and egg whites before my first big case, but I share with you my breakfast from the other morning because it is my new favorite! Chocolate chia protein pudding!

Now I know this doesn’t look appetizing at all, but it’s super delicious and a SUPER food. G-Mama is somewhere saying “chia pudding? I thought she hated that?”. You see a few weeks ago I was complaining about how I’ve tried making chia pudding several times and it will just NEVER happen for me. Well Minnie doesn’t give up easy. I was determined to find a way to make this delicious, and I did! Here is what is in it:

  • 3 Tablespoons of white chia seeds
  • 1/2 scoop of protein powder (I used my butter toffee that they revamped and really it just tastes like plain vanilla- ugh)
  • 1 Tablespoon of cocoa powder
  • 1/2 cup of unsweetened vanilla almond milk
  • Stevia in the raw to taste (about less than 1/2 Tablespoon)

Just mix everything together and pop in the fridge overnight like you are making overnight oats. The cocoa powder might be hard to mix in at first since there’s nothing for it to hold onto yet. In the morning you will probably have a thick film of cocoa on the top, it’ll mix in great once the chia seeds have plumped up some!

After my busy bee day in the OR, I changed for the gym, but went straight home to pick up Phoebe. You see, Phoebe has REALLY been misbehaving lately and I haven’t slept the past two nights because she literally will jump on my chest at 2am, kick her back paws on me and huff in my face. She doesn’t bark, she makes those little attitude noises (that’s what I call them). I wanted to toss the little furball like a football these past two nights. Obviously I never would, don’t call PETA, you guys know I love Phoebe Buffay more than I love my own life. I also love sleep though, so little puppy vacation for Miss Buffay again.

I came home, she jumped in her carrier and then we hit the road for G-Mama and Pop Pops. I let her come out of her carrier though and I held her for the drive.

After I dropped off trouble, I headed to the gym for the quickest workout I’ve done in a long time. My knees were SHOT from a full OR day and from my injury the day before. I cannot believe hitting my knee on a stupid door has caused me so much pain. I’m so clumsy…

I was only able to do half of my booty workout and then I hit the elliptical for 22 minutes because it was easier on my knees. I was there a grand total of 35 minutes, but I guess it’s better than nothing?

So in order to continue with my booty workout, I think I need to cool it on the squats a little bit. I realize this is probably some of my problems as to why they ache so bad. I will still do other exercises. Here’s our next workout for our bums!

When I came home I had the MOST DELICIOUS DINNER I’ve had in a while. I’ve mentioned on here how crazy I am about bison lately. The protein is VERY high and it’s a nice lean meat. Well my amazing Dad bought me ground bison at BJs (I’ve only seen it at Wegmans) and made me burger patties, then smoked them. Holy cow…. er, bison πŸ˜‰

Now I’m not really a burger person, but these were incredibly moist and absolutely scrumptious.

Instead of a bun, I did a big romaine leaf (I just folded it up around the burger), topped it with cooked white onion and some goat cheese. The goat cheese really took this burger up a notch because it melted nice and creamy! Oh la la, my mouth is watering again wanting another. Thanks Dad, you’re the best, love you πŸ™‚ Oh and I will be wanting more, thanks πŸ˜‰

My night finished watching Friends and cleaning up around the apartment. I’m watching my favorite episodes where Monica and Chandler start dating. Last night I watched the one where Ross can’t flirt. It’s like watching my own life on screen…. πŸ˜‰ I’m a disaster folks.

    Every night – er- I mean early morning, I have thought it was either Wednesday, Saturday or Friday. I woke up Monday thinking it was Wednesday, had to even ask what day it was. I woke up yesterday completely convinced that it was Saturday, I was so angry I turned my alarm on and couldn’t believe I would do that, when it hit me, it’s only Wednesday. Then this morning, I got all excited because I thought it was Friday…..yup huge disappointment hahaha.
