Apple Cider Vinaigrette

I love making new vinaigrettes. Ever since I did the 30 day clean eating challenge in January, I have made my own salad dressings instead of buying them. I think they taste so much better and are super fresh! Plus the possibilities are endless.

This vinaigrette is made using apple cider vinegar and apple juice. I bought the Juicy Juice because it doesn’t have any extra added sugars. The sugars are all natural from the apple.

I looked at “light” apple juices, and figured out real quick that they were charging one to two bucks extra for watered down apple juice. I’m not kidding, the ingredients were apple juice and water. That’s how they make it “light”. So if you want to make light apple juice, do a 1/2 cup of apple juice and a 1/2 cup of water, and save yourself a few bucks!

Anyway, onto the vinaigrette!

For this recipe you will need: 

  • 1/4 cup of extra virgin olive oil 
  • 1/2 cup of natural apple juice
  • 1/4 cup of apple cider vinegar
  • 1 Tablespoon of natural honey
  • 1-2 Tablespoons of fresh lemon juice
  • 1 teaspoon of fresh lemon zest
  • 2 Tablespoons of nonfat plain greek yogurt
  • pepper to taste

(makes 20 servings)

Just add everything to a measuring cup!

I actually added the greek yogurt last minute to thicken it up a bit. I liked the taste too! Gives it an extra little zing

Nutritional info: 2 Tablespoons per serving- 30.25 calories, 2.76 grams of fat, 1.62 grams of carbs, 0.5 grams of protein, 1.57 grams of sugar
